(Passiflora Edulis Sims)

YELLOW PASSION FRUIT. The Maracuya has a round shape, it is slightly oval,  with a hard skin of greenish-yellow color, and it belongs to the family of the passifloras. It is commonly known as: 'Yellow Passion Fruit'. The pulp is gelatinous, orange-yellow, and it contains small edible seeds. It has an acidic flavor.

PREPARATION

The Yellow Passion Fruit can be consumed fresh, after splitting the fruit into halves, scooping out the pulp with a spoon and adding sugar to sweeten. Its skin is not edible. The Yellow Passion Fruit is also used in juices, desserts, cocktails, ice cream, sauces and salads. When ripe, the internal process of transformation of sugars starts, the skin becomes slightly wrinkled, but this condition does not in any way affect the quality of the fruit.  Better preserved in the refrigerator. Unripe Yellow Passion Fruit will ripen best at room temperature
